OH MY GOD! I love breakfast, it is my favorite meal of the day. Pancakes are such a treat to have in the morning, especially during the colder months. Don’t you agree? I don’t know, but they’re so comforting, they take me to a happy place straight in the morning. Whenever I have a little bit more time for breakfast, I tend to either make pancakes or waffles, but pancakes tend to be my favorite.
When I turned vegan I thought I’d never have my pancakes ever again. However, I started mixing up things, failed a bunch of times until I finally made these. They are a staple when my family is over and my housemate loves them too. I’m a simple gal when it comes to toppings, I either go for just maple syrup or berries and maple syrup.
