Christmas time for vegans and vegetarians can be quite tricky especially if you spend Christmas with people who all sorts of food including fish and meat, it can become difficult fo find what to eat. I am spending Christmas in Portugal this year, my family eats cod fish on the eve and roasted lamb on Christmas day so they find it very difficult to cook for me.
My mother has been roaming around supermarkets to find alternatives for me, so i came up with this idea of stuffed mushrooms with noodles and asparagus on the side. The Zoodles are basically zucchini spiralized to create the idea of noodles, its just the zucchini sauteed in a pan with olive oil and garlic.
